Ingredients:
- 1 cup barley, uncooked
- 2 cups arugula, packed
- ½ red onion minced
- Dressing
- ¼ cup tahini
- ¼ cup water
- juice of 1 lemon
- 1 tsp liquid aminos
- a dash of smoked paprika
- salt and pepper to taste
Directions:
- Cook the barley according to package instructions. In the meantime prepare the dressing by combining all ingredients. Whisk well and set aside, it will thicken up as it sits.
- Allow the barley to cool and once cool, combine arugula, barley and red onion. Drizzle with as much dressing as you like and serve. Can be store in refrigerator for later.
