Vegan parmesan is perfect for adding a nutty, sweet-savoury flavour to all kinds of dishes, plus it's super-easy and very quick to make with just four ingredients. It's gluten-free too.
· 125g raw cashews
· 3 tbsp nutritional yeast flakes
· ¾ tsp ground sea salt
· ½ tsp garlic powder
1. Whizz all the ingredients together a food processor for a couple of minutes, until they resemble fine breadcrumbs.
2. Store in an airtight jar in the 'fridge.
